Subject: [PATCH 1/2] Fix CI: bump coveralls action, cap hypothesis on PyPy
 3.10

- coverallsapp/github-action 2.3.8 installs the coveralls formula by its
  fully-qualified name, which Homebrew 6 requires for untrusted taps.
  2.3.7 fails on macOS with "Refusing to load formula
  coverallsapp/coveralls/coveralls from untrusted tap".
- hypothesis>=6.156 ships a Rust extension built with pyo3 0.29, which
  does not support PyPy < 3.11, and there are no pp310 wheels. Keep
  PyPy 3.10 on the last pure-Python release.

Subject: [PATCH 2/2] Fix CI: only install linux-modules-extra when vcan is
 missing

ubuntu-latest now runs Ubuntu 26.04, where the vcan module is part of
linux-modules and there is no linux-modules-extra package:
