Replace database brief with PostgreSQL and Redis briefs - #14

Split docs/topics/database.md into two product briefs checked against PostgreSQL 18.6 and Redis 8.10.2. postgresql.md covers indexes, isolation, MVCC and VACUUM, locking and schema changes, query planning, SQL gotchas, WAL, replication, pooling, and schema design. redis.md covers the execution model, scripts and transactions, data structures, expiration and eviction, persistence, Sentinel, Cluster, messaging, and common patterns. Move B-tree vs LSM and search and OLAP stores into system.md. Drop the MongoDB, Cassandra, and InnoDB material.
